RE: ASP 4 stroke poping sound
I have run both the ASP .65 and .80. Had great luck with both. The .65 and .80 use the same crankcase, head, and carb. The only difference is the crankshaft and size of the piston/cylinder. I ran MA 12x8 on the .65 and 13x8 on the .80. As for rpm, I don't remember as this was in 1998-2004. I never had a big problem with either engine.

RE: plane climbs at full thottle
With a flat bottomed wing....speed creates lift.....so when you trim for straight and level at 1/2 throttle....it should climb when you open the throttle.....descend when you close the throttle.... Most trainers with flat bottomed wings have some down thrust built into the firewall to stop them from climbing drastically under full throttle.... Even with semi and full symmetrical wings the same thing applies....but not as noticeable.....

Very doubtful you could find a bearing that would fit....and for what it would cost....you would be about as well off to just buy a good bb engine....

Pine wood instead of spruce?
I've used pine quite a bit for both stringers and spars....just be sure that there are no knots in it....I used to take old 2x4's and 1x4's and rip them down on a table saw.... Never had a problem....even up to a .60 size bird for spars.....

OS 40 4-STROKE have enough power for this plane
Had a .40 in a 4* 40....flew it just fine....not real great vertical....bui it had plenty of power.....An Extra....maybe....but that depends on how you plan to fly it..... It should do fine for "normal" aerobatics.... Four strokes are designed for high low end torque with high pitched props and low rpm's....not so much for speed....a flatter pitched prop could let it tach up too high....so if you feel the need to use a flatter prop.....watch the top end rpm's...... My $.02375 worth......

Interesting Debate in the Clubhouse
Calvin likes to pee on all kinda things....not just SPADS and BALSA......pretty famous character....BUT.....all in the name of FUN..... I started flying in 1987.....with a balsa trainer.....sure wish SPADs hadda been around then..... Took me 1 1/2 YEARS of flying....crashing....rebuilding....flying....crashing....and rebuilding to finally get to the point where I could bring a plane home in one piece.....buddy cords were practically non existent then where I flew..... I will agree that some people either don't have time or don't have the skill to build even a balsa trainer....let alone a SPAD trainer.....but for my part.....I would highly recommend a newbie learn on a SPAD trainer....takes the ol' "pucker factor" out of learning..... My $.01375 worth.....for what it's worth.....
