yes just one servo for flaps I have them extend to 20 deg .. most flights I have not used them at all.

I would use all this area.. the whole body produces lift. If your doing some calculations give it a Cl of .9 and the actual wing what ever your airfoil gives. On this scale wing loading of even 150 oz/sqft would be ok i would think. If you want to use a little less just go straight across the back of the wing. Im running a wingloading of 68oz on the F-14 and it still has a nice approach speed and good control at slow speed.
