RE: which boat for .61 nitro
It kind of depends on what you want from your boat. I've never built a BSB but I've seen quite a few and driven one. They seem to be tricky but fun to drive. A .61 or so is probably the biggest motor I've seen on one. I have heard the build instructions and some of the less important parts in the kits leave something to be desired. I have one SI. It's very fast and a lot of fun to drive, but I do flip it occasionally (as with ALL of my boats[;)]). It was well documented and simple to build.

RE: PICS OF YOUR AIRBOATS
The hull appears to be similar in size to the "Windy" kit but nothing the rest looks to be pretty custom[8D] I would love to see some video of it in action!

RE: Project... maybe...
That is a great looking and running boat. Nice work! I attribute the banking turns to the relatively flat(less than 45 degrees) angle you have between the bottom of the hull and the sides. The shallower angle makes it harder for the hull to break free from suction with the water in turns so the hull tends to lean more and track better. I have built a couple of boats like this and love the precise steering that is usually only possible with a water rudder. The other thing that helps a boat track well and I think applies to your boat is if the hull width tapers in from the stern to the bow, it will tend to help a boat straighten out, kind of like applying toe-in to the front landing gear on a tail dragger airplane. (I've been wanting to use that analogy for a long time[8|] )

RE: how to mount rudders
For single rudder setups I like to use a brass rod mounted the length of the leading edge of the rudder. It runs through holes in the back of the engine plate and a plate at deck level.

I think by the time it is decked and rigged you will be looking at 5 or 6 pounds. I wouldn't go bigger than a .46 on that hull. Keep the pics coming![8D]

RE: Cutting blue isulation foam
I've only built one foam hull to date but I used a table saw to rough cut and then used the concrete front porch to "file" to size. It worked well but was messy. If you are going to do more than one, I would suggest a foam cutter. Someone will come along with plans for one.
