I think it is better to use a brushless system and lipo battery. Don't invest in 'old' stuff, allthough it might be cheap to buy now. What kind of prop was suggested to use with the plane/motor combo? I think a Hobbyking brushless motor from the 'blue wonder' series should work if you can keep the plane light. A 2S ~700mAh battery and a brushless esc and you are all set

Maybe one of the magnets in the motor came loose? Here is a nice replacement: Turnigy H2218 heli motor 3200kv. Get a 5x5E and an around 60A esc and you will get more than 100kph out of it.

You might want to see if there is interest at one of the clubs to invest in a paved runway. imho, it's better to have a dedicated airfield (paved, but cramped) than having people around you (in the park) that distract you from flying because asking questions.

You have a better chance with 1 esc per motor variation than with 1 esc for 2 motors variation. Good quality motors and good esc's will not give a variation you will notice, I think. Are the motors placed closely to each other, like a few cm's? If so, then you won't notice it at all, I think.

Are you sure you are not mixing up brushed and brushless? Your Turnigy 30A ESC is a brushless esc, you can't measure voltage on it, at least, not at the motor connectors. it's not quite clear to me what you are trying to do, but here are a few hints. You need a brushed ESC between the brushed motor and the receiver. One battery powers both the esc and the receiver (through the esc, it powers also the connected servo's). The esc also powers the motor. I will keep an eye on this thread, let me know if you need more help!

Probably it won't. If if would, then Hobbyking would have mentioned this in the product specs of the receiver because it would be a good selling opportunity for Hobbyking. As far as I know, Hobbyking doesn't sell any receivers that are both fhss and futaba compatible.

I would start with the settings the esc comes with, probably you are ok with that. I bought my first programming card a few weeks ago after not changing any settings for any esc I have for the past 10 years. I bought it for my quad, where I needed to set 4 esc's and didn't like the hassle of programming through the tx.
